Today we propose this pumpkin and ginger cream with spirulina topping, an easy, healthy and nutritious dish, ideal for lunch or dinner.

On the one hand, pumpkin has Vitamin C and beta-carotene, a precursor of vitamin A, responsible for reducing fine lines, wrinkles and rough texture. For its part, ginger is an antioxidant, important in the fight against free radicals responsible for tissue aging.

Ingredients

  • 1 kg pumpkin

  • 1 onion

  • 1 leek

  • 1 slice of ginger

  • 1 litre of vegetable stock

  • 1 litre of vegetable stock

  • 1 pinch of salt

  • 1 teaspoon spirulina, crunchy

Instructions

  • Chop the onion, leek and ginger and start frying them in oil.
  • When the ingredients are cooked, add the pumpkin and sauté with the spices: turmeric, salt and pepper.
  • Add the vegetable stock and cook over a medium heat until the pumpkin is cooked (approximately 20 minutes).
  • Mash everything.
